Mum’s Famous Carrot Cake



1 ½ cup grated carrot

½ cup walnuts

2 eggs

½ cup caster sugar

¾ cup vegetable oil

½ tsp vanilla

1 cup wholemeal flour

1 tsp bicarbonate soda

½ tsp salt

1 tsp cinnamon

½ tsp cloves



250g Philadelphia Cream Cheese

2 cups icing sugar

2 tsp lemon rind

½ cup butter



  1. Pre-heat over 160° degrees fan forced.
  2. Sift dry ingredients into a medium bowl
  3. Combine eggs, sugar, oil, vanilla then add to dry ingredients
  4. Mix until smooth
  5. Stir in carrots and walnuts
  6. Bake for 50 mins


  1. Combine all ingredients in an electric mixer until smooth and creamy
  2. Spread evenly over top of cake
