Unrefined Hot Cross Buns

By March 23, 2016 Recipes

Unlike your traditional hot cross buns, our recipe gives the buns a nice crunch to the exterior yet leaves a soft, fluffy centre. We’ve removed the refined sugar so you can enjoy these bad boys without the guilt this Easter!

250g wholemeal flour

2tsp cinnamon

1 tsp ground ginger

½ tsp baking soda

1 tsp baking powder

½ cup almond milk

2 tbsp coconut oil

2 eggs (one for glaze)

1 tsp vanilla extract

1 tsp lemon juice

2 tbsp raw honey

1 tbsp coconut oil

1 tbsp cacao powder

  1. Pre-heat oven to 160° celcius and line a baking tray with baking paper
  2. Combine all dry ingredients into a medium bowl and mix well
  3. In a separate bowl, whisk almond milk, coconut oil, 1 egg, vanilla extract, lemon juice and honey until combined and slightly aerated
  4. Fold the wet ingredients into the dry until combined (mixture will be quite moist)
  5. Separate the mixture into 8 equal bun portions and place onto the baking tray
  6. Briefly beat the second egg and lightly coat the individual buns
  7. For the cross, combine the coconut oil and cacao powder until a paste forms. Dip a knife  into the mixture and “paint” the cross onto each bun
  8. Bake for 20 minutes
